30-Minute Ground Beef Stroganoff is a quick and creamy comfort dish made with tender egg noodles, savory ground beef, and a rich mushroom-style sour cream sauce that comes together in just half an hour.

Ingredients

  • 6 ounces egg noodles
  • 1 pound ground beef
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup beef broth
  • 1 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup sour cream

Instructions

  1. Cook noodles: Boil egg noodles according to package directions. Drain and set aside.
  2. Brown beef: Cook ground beef in a skillet over medium heat until fully browned. Drain excess fat.
  3. Make roux: Melt butter in the same skillet. Whisk in flour and cook 2 minutes.
  4. Add broth: Slowly whisk in beef broth until smooth and slightly thickened.
  5. Add milk: Stir in milk and simmer until creamy and thick.
  6. Season: Add garlic powder, onion powder, salt, and pepper.
  7. Combine: Add beef and noodles back into the skillet and mix well.
  8. Finish: Stir in sour cream and serve warm.

Notes

  • Don’t boil after adding sour cream to prevent curdling.
  • Add mushrooms for a classic stroganoff flavor.
  • Use full-fat sour cream for best texture.
