Savory ground beef enchiladas with melty cheese and a flavorful filling, perfect for a comforting Mexican-inspired meal.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) red enchilada sauce
  • 1 can (4 oz) chopped green chilies
  • 8–10 corn tortillas
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • ¼ cup chopped fresh cilantro
  • Salt and pepper to taste
  • Olive oil or vegetable oil for frying
  • Optional toppings: sour cream, sliced olives, diced tomatoes, avocado, sliced jalapeños

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, add onion, and sauté until translucent.
  3. Add garlic and cook 1 minute more.
  4. Add ground beef; cook until browned and fully cooked. Season with salt and pepper.
  5. Stir in chopped green chilies; cook 2 minutes.
  6. Quick-fry tortillas in a separate skillet for a few seconds per side until pliable. Drain on paper towels.
  7. Pour a bit of enchilada sauce in a 9×13-inch baking dish.
  8. Spoon 2–3 tbsp beef mixture onto each tortilla, add cheese, roll up, and place seam-side down in the dish.
  9. Pour remaining enchilada sauce over top and sprinkle with remaining cheese.
  10. Bake 20 minutes until cheese is melted and bubbly. Garnish with cilantro before serving.

  • Use corn or flour tortillas depending on preference.
