- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) red enchilada sauce
- 1 can (4 oz) chopped green chilies
- 8–10 corn tortillas
- 1 ½ cups shredded cheddar or Mexican blend cheese
- ¼ cup chopped fresh cilantro
- Salt and pepper to taste
- Olive oil or vegetable oil for frying
- Optional toppings: sour cream, sliced olives, diced tomatoes, avocado, sliced jalapeños
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat, add onion, and sauté until translucent.
- Add garlic and cook 1 minute more.
- Add ground beef; cook until browned and fully cooked. Season with salt and pepper.
- Stir in chopped green chilies; cook 2 minutes.
- Quick-fry tortillas in a separate skillet for a few seconds per side until pliable. Drain on paper towels.
- Pour a bit of enchilada sauce in a 9×13-inch baking dish.
- Spoon 2–3 tbsp beef mixture onto each tortilla, add cheese, roll up, and place seam-side down in the dish.
- Pour remaining enchilada sauce over top and sprinkle with remaining cheese.
- Bake 20 minutes until cheese is melted and bubbly. Garnish with cilantro before serving.
