Delicious Apple Cinnamon Breakfast Quesadillas that are perfect for a delightful morning treat. Sweet cinnamon apples and creamy cheese make these quesadillas a breakfast favorite!

Ingredients

  • 2 medium apples (Granny Smith or Honeycrisp), cored and thinly sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar (or maple syrup)
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese (or cheddar + mozzarella blend)
  • 1 cup cream cheese, softened
  • 2 tablespoons unsalted butter, for cooking

Instructions

  1. In a mixing bowl, toss thinly sliced apples with lemon juice, cinnamon, and brown sugar. Let sit 10 minutes.
  2. Spread cream cheese on one side of each tortilla. On half of the tortilla, layer cinnamon apple mixture and shredded cheddar. Fold in half.
  3. Melt 1 tablespoon butter in a skillet over medium heat. Cook two quesadillas at a time for 2-3 minutes per side until golden and cheese melts. Repeat.
  4. Remove from skillet and let cool briefly. Slice each quesadilla into wedges.
  5. Serve warm, optionally with nuts or a dollop of whipped cream/yogurt.

Notes

  • For a healthier version, use maple syrup instead of brown sugar.
  • Optional: add nuts for extra texture and flavor.
