Apple Pie Enchiladas Bake is a delicious twist on traditional apple pie, featuring soft tortillas filled with a spiced apple filling and topped with caramel sauce.

Ingredients

  • 4 cups peeled and diced apples
  • 375 ml water
  • 150 g granulated sugar
  • 110 g brown sugar, packed
  • 2 teaspoons apple pie spice blend
  • 3 tablespoons cornstarch
  • 6 medium soft flour tortillas
  • 3 tablespoons cinnamon sugar
  • 120 ml caramel sauce
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Combine apples, water, granulated sugar, brown sugar, and apple pie spice in a saucepan. Cook over medium heat until apples soften, about 10 minutes.
  3. Add cornstarch and cook 2–5 minutes, stirring until thickened. Remove from heat and set aside.
  4. Spoon about 80 ml of filling onto each tortilla, sprinkle with cinnamon sugar, and roll tightly. Arrange seam-side down in a baking dish.
  5. Blend caramel sauce with melted butter and pour evenly over tortillas. Let rest 15 minutes at room temperature.
  6. Bake for 30–35 minutes until tortillas are lightly golden and sauce is bubbling. Cool slightly before serving.

Notes

  • Add a pinch of nutmeg for extra flavor.
  • Serve warm with a scoop of vanilla ice cream.
