Baileys Cheesecake Balls are creamy, boozy, and luxuriously irresistible, combining chocolate-covered cookies, mascarpone cheese, and Irish cream liqueur, coated with white and dark chocolate.

Ingredients

  • 2 dozen chocolate-covered butter cookies
  • 8 ounces mascarpone cheese
  • ⅓ cup Irish Cream Liqueur
  • 2 ounces dark chocolate, chopped
  • 10 ounces white chocolate, chopped

Instructions

  1. Crush cookies and combine with Irish Cream Liqueur in a bowl.
  2. Add mascarpone cheese and mix until smooth.
  3. Form balls using a small scoop and place on parchment-lined tray. Freeze for at least 45 minutes.
  4. Melt white chocolate in a double boiler and coat frozen balls. Refrigerate for 1 hour.
  5. Melt dark chocolate in double boiler and drizzle over coated balls. Allow chocolate to set for at least 30 minutes before serving.

Notes

  • Chill cheesecake balls thoroughly before serving.
  • Store leftovers in the refrigerator for up to one week.
