Beef Stir Fry with Vegetables is an easy, healthy, and versatile dish featuring tender beef slices, a colorful medley of vegetables, and a savory-sweet sauce. Perfect for weeknight dinners.

Ingredients

  • 1 lb (450g) beef (flank steak, sirloin, or ribeye), thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons vegetable oil for stir-frying
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • ½ cup snap peas, ends trimmed
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Steamed rice (optional, for serving)

Instructions

  1. Prepare the beef: Thinly slice against the grain. Optionally marinate in soy sauce, garlic, and ginger 15–30 minutes.
  2. Make the sauce: Whisk together soy sauce, hoisin, sesame oil, honey, garlic, and ginger. Set aside.
  3. Heat pan: Heat 1 tbsp vegetable oil in a wok or skillet over medium-high. Add beef in a single layer and sear 2–3 minutes. Remove and set aside.
  4. Stir-fry vegetables: Add remaining oil. Cook carrots, bell pepper, and broccoli 3–5 minutes until tender-crisp.
  5. Add snap peas: Stir-fry another 2–3 minutes.
  6. Combine beef and sauce: Return beef to pan with sauce. Stir to coat, cook 1–2 minutes until sauce thickens slightly.
  7. Serve: Garnish with green onions and sesame seeds. Serve over steamed rice or enjoy on its own.

Notes

  • Marinating the beef enhances flavor and tenderness.
  • Vegetables can be substituted or added as desired.
  • Great for meal prep and reheats well.
