Tender chicken breasts baked with creamy rice and topped with cheddar and Parmesan cheese for a comforting, one-pan meal that’s easy to make.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 1/2 cups whole milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large ovenproof skillet or baking dish, melt butter over medium heat.
  3. Add chicken breasts and sear 2–3 minutes per side until lightly golden.
  4. Pour in chicken broth and sprinkle rice evenly around the chicken.
  5. Pour milk over the rice and cover skillet or dish with a lid or foil.
  6. Bake for 25–30 minutes until rice is tender and chicken is cooked through.
  7. Sprinkle cheddar and Parmesan cheeses over the top and return to oven uncovered for 5 minutes until cheese is melted and bubbly.
  8. Serve warm and enjoy!

Notes

  • Optional: add steamed vegetables or fresh herbs for extra flavor and color.
  • Leftovers can be reheated in the oven or microwave.
