Soft, buttery pretzel bites with a golden crust and fluffy interior. Perfect as a snack or appetizer, served warm with optional melted butter.

Ingredients

  • 1 1/2 cups warm milk or water (110–115°F)
  • 1 tablespoon brown sugar
  • 1 (0.25-ounce) package active dry yeast
  • 4 1/2 cups all-purpose flour, plus extra if needed
  • 2 tablespoons melted butter, plus extra for brushing
  • 1 teaspoon fine sea salt
  • 9 cups water
  • 1/3 cup baking soda
  • 1 large egg, whisked with 1 tablespoon water
  • Pretzel salt or coarse sea salt for sprinkling

Instructions

  1. Mix warm milk and brown sugar, sprinkle yeast on top, and let foam 5 minutes.
  2. Add flour, melted butter, and salt. Knead until smooth (4 minutes), adding more flour if sticky.
  3. Place dough in oiled bowl, cover, let rise 20–30 minutes until doubled.
  4. Preheat oven to 450°F. Line two baking sheets with parchment. Bring 9 cups water and baking soda to boil.
  5. Divide dough into 12 pieces, roll each into 3/4-inch ropes, cut into 1-inch bites.
  6. Boil bites 30 seconds at a time, transfer to sheets spaced apart.
  7. Brush with egg wash, sprinkle coarse salt.
  8. Bake 12–14 minutes until golden. Optional: brush with extra melted butter immediately after baking.
  9. Serve warm.

Notes

  • For extra buttery bites, brush with melted butter after baking.
  • Can serve with mustard or cheese dip.
  • Best eaten the same day for optimal softness.
