A hearty, layered casserole with seasoned ground beef, vegetables, a creamy cheese layer, and a biscuit base—perfect for a comforting dinner.

Ingredients

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 1/2 cups biscuit mix (like Bisquick)
  • 1 cup water
  • Cooking spray
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 1/2 cups shredded cheddar cheese, Fiesta blend, divided
  • 1 teaspoon garlic powder
  • 1/2 cup mild salsa

Instructions

  1. Preheat oven to 350℉.
  2. Cook ground beef in a skillet over medium-high heat until no longer pink. Drain excess fat.
  3. Prepare biscuit dough by combining biscuit mix and water. Press into a greased 9×13-inch casserole dish and bake 5–8 minutes until lightly golden.
  4. Add chopped onion and red bell pepper to cooked beef. Stir in taco seasoning. Remove from heat.
  5. Spread beef mixture evenly over baked biscuit layer.
  6. Mix sour cream, mayonnaise, 3/4 cup shredded cheese, diced green chiles, and garlic powder. Spread over beef layer.
  7. Add spoonfuls of salsa over sour cream layer. Sprinkle remaining shredded cheese evenly on top.
  8. Bake uncovered for 30 minutes until hot and bubbly.

Notes

  • Use mild or hot salsa depending on spice preference.
  • Fiesta blend cheese gives great color and flavor, but any shredded cheddar works.
  • Great for potlucks or meal prep—reheat well.
