Cheesy Ground Beef and Rice Casserole is a comforting, easy-to-make dish that combines seasoned ground beef, rice, creamy sauce, and melted cheddar cheese for a family-friendly meal.

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Brown the beef: In a skillet over medium heat, cook ground beef and diced onion until browned and onion is soft. Drain excess fat.
  3. Add garlic: Stir in minced garlic, cook 30 seconds until fragrant.
  4. Make the sauce: In a bowl, whisk together cream of mushroom soup, milk or broth, paprika, salt, and pepper.
  5. Assemble: In the prepared dish, combine cooked rice, beef mixture, half the shredded cheese, and sauce. Mix well.
  6. Top and bake: Sprinkle remaining cheese on top. Cover with foil and bake 20 minutes until bubbly.

Notes

  • You can use cream of chicken instead of mushroom soup for variation.
  • Garnish with parsley for color and freshness.
