Hearty and creamy hamburger potato soup with tender potatoes, ground beef, and rich cheddar cheese. Perfect for cozy meals.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté diced onion and garlic until fragrant.
  2. Add ground beef and cook until browned; drain excess fat.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
  4. Stir in milk and heavy cream, then gradually add shredded cheddar cheese until melted.
  5. Season with salt and pepper to taste and serve warm.

Notes

  • Use any type of potatoes you prefer, such as russet or Yukon gold.
  • Optional: garnish with chopped green onions or extra cheese.
