A simple, comforting family casserole with ground beef, rice, and melty mozzarella cheese—perfect for weeknight dinners.

Ingredients

  • 1 pound ground beef
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (14.5 ounce) can diced tomatoes with juice
  • ½ cup long grain white rice
  • ¾ cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Stir in cream of mushroom soup, diced tomatoes with juice, uncooked rice, salt, and pepper.
  4. Transfer mixture to a greased baking dish and spread evenly.
  5. Cover tightly with foil and bake for 40–45 minutes, or until rice is tender.
  6. Remove foil, sprinkle mozzarella cheese on top, and bake uncovered for an additional 5–10 minutes until cheese is melted and bubbly.
  7. Let rest for 5 minutes before serving.
