Chicken Avocado Melt Sandwich

A delicious, hearty sandwich with tender grilled chicken, creamy avocado, melty cheese, and fresh veggies. Perfect for lunch or dinner.

Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  2. Cook chicken 6–7 minutes per side until fully cooked. Let rest, then slice thinly.
  3. Slice avocado and prepare cheese slices. Set aside.
  4. Spread mayonnaise and Dijon mustard on each bread slice.
  5. Layer sliced chicken, avocado, cheese, red onion, and tomato on two bread slices. Top with remaining bread, mayo side down.
  6. Heat skillet over medium heat with butter or olive oil. Grill sandwiches 3–4 minutes per side until bread is golden and cheese melted, pressing gently.
  7. Let cool for a minute, slice in half, and serve warm.

Notes

  • Use your favorite cheese and bread to customize flavor.
  • Optional: add spinach or arugula for extra greens.
  • Can make ahead by grilling chicken and assembling sandwiches just before serving.
