This chicken zucchini bake is a comforting one-dish meal with juicy chicken, fresh zucchini, and gooey melted cheese. Perfect for busy weeknights or family gatherings, bursting with flavor in every bite.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, sliced into ½ inch rounds
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt, pepper, and half of the Italian seasoning.
  3. Arrange chicken in the baking dish and surround with zucchini slices.
  4. Drizzle with olive oil and sprinkle garlic powder and remaining Italian seasoning on top.
  5. Cover generously with shredded mozzarella cheese.
  6. Bake for 30–35 minutes until chicken reaches 165°F (75°C) and is golden brown.
