Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 yellow onion, diced
  • 1 carrot, diced
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups heavy cream
  • 3 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups bowtie pasta (farfalle)
  • 2 cups shredded cooked chicken (rotisserie preferred)
  • Chopped fresh parsley, for garnish (optional)

Instructions

  2. Stir in garlic, salt, pepper, Italian seasoning, and red pepper flakes until fragrant.
  3. Reduce heat to low, add butter, and sprinkle in flour. Stir constantly for 1 minute to make a roux.
  4. Slowly pour in heavy cream while stirring, then add chicken broth. Simmer 5–7 minutes until thickened.
  5. Add bowtie pasta and shredded chicken. Simmer 6–8 minutes until pasta is al dente.
  6. Remove from heat. Stir in mozzarella and Parmesan until melted. Serve warm, garnished with parsley if desired.
