Ingredients
2 large eggs
1 cup grated Parmesan cheese
1 cup whole milk cottage cheese (preferably Friendship Dairies)
1 lb (16 oz) orzo pasta
4 cups vegetable or chicken broth
Kosher salt, to taste
Freshly ground black pepper, to taste
Instructions
In a mini food processor or blender, combine 1 cup cottage cheese, 1 cup Parmesan, 2 eggs, a pinch of kosher salt, and freshly ground black pepper. Purée until smooth and set aside.
In a medium pot, combine 1 lb dried orzo with 4 cups vegetable or chicken broth. Place over medium-high heat and cook, stirring often, until liquid is absorbed and orzo is al dente (12-15 minutes).
Remove from heat and stir in the cheese mixture until fully combined with the orzo.
Taste and adjust seasoning with additional salt and pepper if needed. Serve hot.
Notes
Use full-fat cottage cheese for the creamiest texture.
