A hearty and comforting Creamy Cowboy Soup featuring seasoned ground beef, tender potatoes, corn, beans, and a rich, velvety broth.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain excess grease.
  2. Add diced onion and sauté 5–7 minutes until softened and translucent.
  3. Add minced garlic, cook 1 minute until fragrant.
  4. Sprinkle in chili powder, ground cumin, and smoked paprika. Stir 1 minute to toast spices.
  5. Pour in beef broth and add diced tomatoes, diced tomatoes with green chilies, potatoes, and black beans. Stir to combine.
  6. Bring to a gentle boil, reduce heat to low, cover, and simmer 20–25 minutes until potatoes are tender.
  7. Stir in corn and heavy cream. Heat gently until warmed through; do not boil.
  8. Season with salt and pepper. Simmer 5 more minutes uncovered for flavors to meld.
  9. Ladle soup into bowls and garnish with shredded cheddar cheese. Serve hot.
