Ingredients
2 cups cheese tortellini
2 large yellow onions, thinly sliced
2 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
1/4 cup white wine
1/2 cup beef or vegetable broth
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup grated Parmesan cheese
Instructions
Cook onions in butter and olive oil over low heat 25–30 minutes until caramelized.
Add garlic and cook 1 minute.
Deglaze pan with white wine, scraping browned bits.
Stir in broth and thyme, simmer 5 minutes.
Add heavy cream, simmer 3–5 minutes until slightly thickened. Season with salt and pepper.
Boil tortellini according to package directions, drain, and set aside.
Add tortellini to sauce, cook 2 minutes together.
Finish with Parmesan and fresh thyme. Serve hot.
Notes
Patience while caramelizing onions is key—they are the flavor foundation.
If sauce is too thick, add a splash of pasta water.
For extra richness, top with more Parmesan and a drizzle of cream before serving.
