Ingredients

  • 2 cups cheese tortellini
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/4 cup white wine
  • 1/2 cup beef or vegetable broth
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup grated Parmesan cheese

Instructions

  1. Cook onions in butter and olive oil over low heat 25–30 minutes until caramelized.
  2. Add garlic and cook 1 minute.
  3. Deglaze pan with white wine, scraping browned bits.
  4. Stir in broth and thyme, simmer 5 minutes.
  5. Add heavy cream, simmer 3–5 minutes until slightly thickened. Season with salt and pepper.
  6. Boil tortellini according to package directions, drain, and set aside.
  7. Add tortellini to sauce, cook 2 minutes together.
  8. Finish with Parmesan and fresh thyme. Serve hot.
