Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
1/2 cup sliced pepperoncini peppers (plus 2 tbsp juice)
1 cup chicken broth
1/2 cup heavy cream
1 tsp garlic powder
1/2 tsp onion powder
1/4 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Instructions
Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, add sliced pepperoncini and 2 tbsp of juice. Pour in chicken broth, heavy cream, garlic powder, onion powder, and Parmesan cheese. Stir and simmer for 3–4 minutes until slightly thickened.
Return chicken to the skillet and coat with the creamy sauce. Simmer 2–3 minutes to allow flavors to meld.
Garnish with fresh parsley and serve warm with rice, pasta, or roasted vegetables.
Notes
Optional: serve with crusty bread to soak up the sauce.
Adjust pepperoncini juice for more or less tanginess.
