Crockpot Marry Me Chicken Meatballs are a creamy, comforting slow cooker dinner with tender chicken meatballs, spinach, sun-dried tomatoes, and a rich Parmesan cream sauce.

Ingredients

  • 1 lb frozen cooked chicken meatballs
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup white cooking wine

Instructions

  1. Place frozen chicken meatballs into the crockpot.
  2. Add chicken broth, white wine, sun-dried tomatoes, and season with salt and pepper.
  3. Cover and cook on low for 4–5 hours or until heated through.
  4. About 30 minutes before serving, stir in heavy cream, Parmesan cheese, and spinach. Cook until spinach wilts and sauce is creamy.
  5. Serve hot over pasta, rice, or with crusty bread to soak up the sauce.

Notes

  • Use fresh or frozen meatballs as preferred.
  • Add red pepper flakes for a little heat.
  • For a thicker sauce, remove the lid in the last 15 minutes of cooking.
