A fresh, light, and flavorful California Roll Cucumber Salad inspired by sushi. Perfect as a side dish, appetizer, or snack.

Ingredients

  • 2 large English cucumbers, thinly sliced
  • 1 avocado, diced
  • ½ cup imitation crab or real crab, shredded
  • 1 green onion, thinly sliced
  • 1 tbsp sesame seeds, for garnish
  • Dressing:
  • 2 tbsp soy sauce or tamari (gluten-free option)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey or maple syrup
  • ½ tsp sriracha (optional)

Instructions

  1. Thinly slice cucumbers and dice the avocado. Shred crab meat and slice green onion. Combine in a large bowl.
  2. Whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, and sriracha (if using).
  3. Pour dressing over cucumber mixture and toss gently to coat.
  4. Sprinkle sesame seeds on top and serve immediately.

Notes

  • Optional: add thinly sliced radishes or toasted nori strips for extra crunch and flavor.
