Ingredients
1 tbsp olive oil
1/2 cup onion, chopped
2 1/2 cups cubed potatoes
1 lb ground beef
1 packet low sodium taco seasoning
1 (10 oz) can diced tomatoes with green chiles
1 cup shredded cheese
Instructions
Heat a cast iron skillet or sauté pan with olive oil over medium heat. Add the onion and potatoes.
Sauté for a few minutes until the onions are soft and fragrant.
Add the ground beef and cook until browned. Drain grease if necessary.
Add the taco seasoning and the entire can of diced tomatoes, including liquids.
Stir, cover, and cook for about 10 minutes or until the potatoes are fork tender.
Top with shredded cheese, let melt, and serve hot.
Notes
Use Mexican blend cheese or cheddar for best melt and flavor.
Serve with sour cream, cilantro, or sliced jalapeños for topping.
