Easy Pizza Cupcakes are a fun, convenient twist on classic pizza, with a golden biscuit crust, melted cheese, and all your favorite toppings baked into perfectly portioned mini pizzas.

Ingredients

  • 2 (8-count) cans refrigerated flaky layer biscuit dough
  • 1 cup pizza or marinara sauce
  • 2 cups shredded low-moisture, part-skim mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 cup mini pepperoni slices
  • 1/2 cup finely diced bell peppers (any color)
  • 1/4 cup finely diced red onion
  • 1/4 cup sliced black olives
  • 2 tbsp chopped fresh basil or dried oregano
  • Optional: cooked crumbled beef sausage, diced ham, sautéed mushrooms
  • Non-stick cooking spray or olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin; place on a baking sheet.
  2. Separate and flatten 16 biscuits into ~4-inch circles, 1/8–1/4 inch thick in the center.
  3. Press each flattened biscuit into a muffin cup, slightly overhanging the edges.
  4. Add 1 tbsp pizza sauce to each cup, then sprinkle ~1 tbsp mozzarella cheese.
  5. Distribute prepared toppings evenly among all cups. Ensure high-moisture toppings are drained/cooked.
  6. Top each with additional mozzarella and sprinkle Parmesan if using.
  7. Bake 15–20 minutes until biscuit edges are golden and cheese is bubbly, rotating halfway through.
  8. Let cupcakes rest 5 minutes, then carefully remove from tin and transfer to a cooling rack.
  9. Garnish with fresh basil, Parmesan, or red pepper flakes if desired. Serve warm.
