Ingredients
1 cup cooked pulled beef (leftover roast or slow-cooked)
1/2 cup shredded cheddar or Monterey Jack cheese
1/4 cup diced onions
1/4 cup diced bell peppers (optional)
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper, to taste
8-10 small flour or corn tortillas
2 tablespoons vegetable oil (for baking or pan-frying)
Optional toppings: sour cream, guacamole, salsa
Instructions
Preheat oven to 400°F (200°C) if baking.
Prepare the filling by mixing pulled beef, shredded cheese, onions, bell peppers, chili powder, cumin, salt, and pepper until combined.
Assemble taquitos by placing ~2 tablespoons of filling on each tortilla and rolling tightly. Secure with toothpick if needed.
Baking: Brush taquitos lightly with oil and place seam-side down on baking sheet. Bake 12–15 minutes, flipping halfway.
Pan-frying: Heat oil in skillet, fry seam-side down until golden, turning occasionally. Drain on paper towels.
Remove toothpicks, serve with sour cream, guacamole, or salsa. Optionally, sprinkle smoked paprika or taco seasoning before baking for extra flavor.
