A quick and comforting casserole featuring shredded rotisserie chicken layered with a creamy stuffing base and topped with melted cheese. Perfect for a weeknight dinner.

Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 box (6 oz) stuffing mix (your favorite brand)
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1/2 cup cream of mushroom soup (or cream of chicken)
  • 1 cup shredded cheddar cheese, divided
  • 1 tsp dried thyme or poultry seasoning
  • Salt and pepper, to taste
  • 2 tbsp butter for greasing
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. In a large bowl, combine stuffing mix, chicken broth, sour cream, cream of mushroom soup, dried thyme, salt, and pepper. Mix until well combined.
  3. Fold in shredded rotisserie chicken and half of the cheddar cheese. Spread mixture evenly into the prepared baking dish.
  4. Sprinkle remaining cheddar cheese on top. Bake uncovered for 25–30 minutes until cheese is melted and bubbly.
  5. Optional: garnish with fresh parsley. Serve hot and enjoy.

Notes

  • Use leftover rotisserie chicken for convenience.
  • Mix in additional vegetables like peas or carrots for a heartier casserole.
