Juicy chicken, colorful bell peppers, and onions roasted on a sheet pan with zesty fajita seasoning, perfect for quick and easy dinners.

Ingredients

  • 2 lbs chicken breasts, sliced into ¼-inch strips
  • 3 bell peppers (red, yellow, green), sliced
  • 2 large onions, sliced
  • 3 tbsp olive oil
  • 2 limes, juiced
  • 16–18 small flour or corn tortillas
  • Fajita Seasoning:
    • 2 tsp chili powder
    • 1 tsp ground cumin
    • 1 tsp paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp oregano
    • 1 tsp salt
    • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix all fajita seasoning ingredients.
  3. Place chicken, bell peppers, and onions on a large sheet pan.
  4. Drizzle with olive oil and lime juice, then sprinkle seasoning evenly. Toss to coat.
  5. Spread everything in a single layer and bake 20–25 minutes until chicken is cooked through and vegetables are tender, stirring halfway.
  6. Warm tortillas in the oven or microwave.
  7. Serve chicken and veggies in tortillas and garnish as desired.
