A simple, comforting Shepherd’s Pie casserole with seasoned ground beef, mixed vegetables, and creamy mashed potato topping.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tbsp butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with chopped onion and garlic until beef is browned. Drain excess fat.
  3. Add frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Simmer 5–7 minutes.
  4. Transfer beef mixture to a greased 9×13-inch baking dish.
  5. Spread mashed potatoes evenly over beef mixture and dot with butter.
  6. Optional: sprinkle shredded cheddar cheese on top.
  7. Bake uncovered for 20–25 minutes until top is golden and bubbly.

Notes

  • Use leftover mashed potatoes or instant mashed potatoes for convenience.
  • Add herbs like thyme or parsley for extra flavor.
