- 1 1/4 cups (150g) all-purpose flour
- 1/4 cup (30g) powdered sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup (113g) cold unsalted butter, cubed
- 1 large egg yolk
- 1–2 tablespoons cold water
- 8 ounces (225g) high-quality white chocolate, chopped
- 1 cup (240ml) heavy cream, chilled
- 1/4 cup (60ml) milk (whole or 2%)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon unflavored gelatin (optional)
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour, powdered sugar, cinnamon, nutmeg, and salt.
- Add cubed butter and mix until crumbly.
- Stir in egg yolk and water until dough forms.
- Press dough into a tart pan and pierce bottom with a fork.
- Bake for 15-20 minutes until lightly golden. Cool.
- Melt white chocolate over simmering water or microwave.
- Whip heavy cream to soft peaks, then fold in melted white chocolate and vanilla.
- If using, dissolve gelatin in milk and stir into mousse.
- Pour mousse into cooled tart crust and refrigerate at least 2 hours.
- Top with berries, white chocolate curls, and powdered sugar before serving.
