Ingredients
2 heads romaine lettuce, finely chopped
1 cup finely chopped Genoa salami
1 cup shredded mozzarella
1 can (15 oz) chickpeas, rinsed and drained
1/3 cup olive oil
1/4 cup red wine vinegar
1 tsp Dijon mustard
1 tsp dried oregano
Salt and black pepper, to taste
Instructions
Finely chop the romaine lettuce, salami, and mozzarella.
Rinse and drain chickpeas thoroughly.
Whisk olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper to make the dressing.
Combine all chopped ingredients and chickpeas in a large salad bowl.
Pour the dressing over the salad and toss until evenly coated.
Let salad sit 5–10 minutes to soak in flavors. Serve chilled, optionally topped with grated Parmesan.
