A hearty and comforting dish featuring tender beef bites and flavorful baby potatoes in a rich garlic butter sauce.

Ingredients

  • 1.5 lbs beef stew meat, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup beef broth
  • 1 tbsp olive oil

Instructions

  1. Cut beef into bite-sized pieces and halve baby potatoes. Optional: parboil potatoes for a few minutes.
  2. Heat olive oil in a skillet over medium-high and sear beef until browned on all sides.
  3. In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to make garlic butter sauce.
  4. Place potatoes and seared beef in a slow cooker. Pour garlic butter sauce over top and add beef broth.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
  6. Let rest 10 minutes before serving.
