- 1.5 lbs beef stew meat, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp dried rosemary
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup beef broth
- 1 tbsp olive oil
- Cut beef into bite-sized pieces and halve baby potatoes. Optional: parboil potatoes for a few minutes.
- Heat olive oil in a skillet over medium-high and sear beef until browned on all sides.
- In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to make garlic butter sauce.
- Place potatoes and seared beef in a slow cooker. Pour garlic butter sauce over top and add beef broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
- Let rest 10 minutes before serving.
