Ingredients
1 lb ground chicken
4 cloves fresh garlic, minced
1 cup grated Parmesan cheese
1 cup breadcrumbs (plain or Italian-seasoned)
2 large eggs
1 medium onion, diced
2 tbsp soy sauce (low-sodium recommended)
1 tsp salt
1 tsp black pepper
Instructions
Preheat oven to 375°F (190°C) and grease a baking dish with nonstick spray.
Sauté diced onions in a skillet over medium heat until soft (about 5 minutes).
In a large bowl, mix ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
Shape mixture into a loaf in the greased baking dish. Sprinkle remaining Parmesan cheese on top. Optionally add paprika or Italian seasoning.
Bake for 45-50 minutes or until internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.
Notes
For extra flavor, top with additional herbs or a drizzle of tomato sauce.
