Ingredients
2 lbs ground chicken
1 cup panko bread crumbs
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup milk
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter, melted
Optional: chopped onions, bell peppers, or mushrooms
Optional: red pepper flakes or hot sauce for a spicy version
Instructions
Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
In a large bowl, combine ground chicken, panko, Parmesan, garlic, milk, egg, salt, pepper, and any optional veggies or spices. Mix gently to combine; do not overmix.
Form mixture into a loaf and place in prepared pan.
Brush the top with melted butter.
Bake for 60–70 minutes or until internal temperature reaches 165°F (74°C).
Let meatloaf rest 10 minutes before slicing to retain juiciness.
