Juicy and flavorful Garlic Parmesan Chicken Meatloaf, made with ground chicken, panko bread crumbs, Parmesan cheese, and a delicious garlic butter topping. A family-friendly dinner that’s easy to make and sure to please!

Ingredients

  • 2 lbs ground chicken
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted
  • Optional: chopped onions, bell peppers, or mushrooms
  • Optional: red pepper flakes or hot sauce for a spicy version

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a large bowl, combine ground chicken, panko, Parmesan, garlic, milk, egg, salt, pepper, and any optional veggies or spices. Mix gently to combine; do not overmix.
  3. Form mixture into a loaf and place in prepared pan.
  4. Brush the top with melted butter.
  5. Bake for 60–70 minutes or until internal temperature reaches 165°F (74°C).
  6. Let meatloaf rest 10 minutes before slicing to retain juiciness.
