Juicy, flavorful, and family-friendly Garlic Parmesan Chicken Meatloaf with a garlicky butter topping—perfect for cozy nights or meal prep!

Ingredients

  • 1.5 lbs ground chicken
  • 1 cup panko breadcrumbs (or gluten-free)
  • ½ cup grated Parmesan cheese
  • 2–3 garlic cloves, minced
  • 1 egg
  • ½ cup milk
  • Salt and pepper, to taste
  • For topping: 2 tbsp butter, melted; 1 garlic clove, minced; 1 tsp chopped fresh parsley (optional)
  • Optional: chopped onions, bell peppers, mushrooms, red pepper flakes, or hot sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, panko, Parmesan, garlic, egg, milk, salt, and pepper. Mix gently.
  3. Form mixture into a loaf and place in a greased loaf pan.
  4. Mix melted butter, garlic, and parsley. Brush over the top of the meatloaf.
  5. Bake 60–70 minutes, or until internal temperature reaches 165°F (74°C). Let rest 10 minutes before slicing.
  6. Slice and serve with your favorite sides.
