Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 can (14 oz) diced tomatoes with juice
  • 1/2 cup fresh cherry tomatoes, halved
  • 1 cup spinach, roughly chopped
  • 1/4 cup fresh basil leaves, roughly chopped
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 cup chicken broth (optional for extra moisture)

Instructions

  1. Season chicken with garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden, 5-7 minutes.
  3. Reduce heat to medium. Add diced tomatoes, cherry tomatoes, and Italian seasoning. Simmer 5 minutes.
