Ingredients
1 lb lean ground beef (or ground turkey/chicken)
8 oz dry farfalle pasta (bowtie)
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
2 cups low sodium chicken broth or water
2/3 cup fat-free cottage cheese
1 cup part-skim mozzarella cheese
3 tsp minced garlic
1 ½ tsp dried oregano
1 Tbsp dried onion flakes
¼ tsp salt
¼ tsp pepper
Instructions
Heat olive oil in a large skillet over medium-high heat and sauté minced garlic until fragrant.
Add ground beef (or turkey/chicken), oregano, onion flakes, salt, and pepper; cook until browned.
Stir in diced tomatoes, tomato sauce, chicken broth/water, and uncooked farfalle pasta; mix well.
Bring to a boil, cover, and simmer for about 15 minutes until pasta is tender.
Remove from heat; gently fold in cottage cheese.
Sprinkle mozzarella cheese on top; cover until melted (1–2 minutes).
Serve hot, optionally garnished with fresh herbs.
