High Protein Creamy Cajun Chicken with Garlic Rice is a smoky, spicy, and creamy dish perfect for a comforting yet high-protein meal. Ideal for lunch or dinner, this recipe combines juicy Cajun-seasoned chicken with flavorful garlic rice and a rich creamy sauce.

Ingredients

  • Cajun Seasoning Mix: 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp oregano, 1 tsp thyme, 1 tsp paprika, 1 tsp chili powder
  • Chicken Marinade: 800g chicken breast (halved), 1.5 tbsp Cajun Seasoning Mix, 2 tsp olive oil, 25g grass-fed butter (for cooking)
  • Fluffy Cajun Rice: 2 cups uncooked long-grain rice (or 4 cups cooked/day-old), 1 medium red onion chopped, 4-5 garlic cloves chopped, Β½ tbsp Cajun Seasoning Mix, fresh parsley for garnish
  • Creamy Sauce: 15g grass-fed butter, Β½ tbsp Cajun Seasoning Mix, 250 ml milk, 150g light cream cheese, 40g Parmesan

Instructions

  1. Marinate the chicken overnight with Cajun Seasoning Mix and olive oil, coating each piece well.
  2. Heat a pan over medium-high heat, melt butter, and cook chicken until golden and crispy. Let rest, then slice into strips.
  3. In the same pan, sautΓ© red onion and garlic until fragrant. Add remaining Cajun Seasoning Mix and toss in day-old rice. Stir to coat.
  4. Lower heat, melt butter, add Cajun Seasoning, then slowly whisk in milk. Add cream cheese and Parmesan, stirring until smooth and creamy.
  5. Plate the Cajun rice, top with sliced chicken, drizzle with creamy sauce, and garnish with fresh parsley.
