Muffins: 1 cup all-purpose flour, 1 tbsp sugar, 1 tsp baking powder, ½ tsp salt, 1 cup milk, 1 egg, 2 tbsp melted butter, 2 tbsp maple syrup
Filling: 6 sausage patties cooked and flattened, 6 eggs scrambled or fried, 6 slices American cheese
Optional Add-ins: Sharp cheddar cheese, turkey sausage, drizzle of hot honey
Instructions
Preheat oven to 350°F (175°C) and grease a muffin tin.
In a bowl, whisk flour, sugar, baking powder, and salt.
Add milk, egg, melted butter, and maple syrup. Stir until just combined (do not overmix).
Cook sausage patties until browned, then flatten slightly. Scramble or fry eggs as desired.
Spoon a layer of batter into each muffin cup. Add sausage patty, a portion of egg, and half a slice of cheese.
Cover with additional batter until muffin cups are just filled.
Bake 18–20 minutes until muffins are golden brown and puffed.
Let cool slightly before serving.
Notes
Grease muffin tin well to prevent sticking.
Add diced jalapeños and pepper jack cheese for a Tex-Mex twist.
Sprinkle cinnamon sugar on top for a sweeter version.
