Honey BBQ Chicken Rice is a one-pan meal with tender chicken coated in sticky-sweet BBQ sauce, served over fluffy rice with colorful veggies. Perfect for a quick, comforting dinner.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, diced
  • Β½ cup BBQ sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Β½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 cup bell peppers, diced
  • Β½ cup corn kernels (fresh or frozen)
  • 2 green onions, sliced for garnish
  • Optional: chopped parsley or cilantro for garnish

Instructions

  1. In a bowl, toss chicken with garlic powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden and cooked through, about 6–8 minutes.
  2. Reduce heat to medium and stir in BBQ sauce and honey. Cook for 2–3 minutes until sauce thickens slightly and coats the chicken.
  3. Add cooked rice, diced bell peppers, and corn. Stir until everything is well coated and heated through.
  4. Top with sliced green onions and optional parsley or cilantro. Serve warm.

  • Use leftover cooked rice for faster prep; day-old rice works best.
