Ingredients
12 oz cheese tortellini
6 oz salami, diced
8 oz fresh mozzarella balls, halved
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
1/4 cup red onion, finely chopped
1/4 cup fresh basil, chopped
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
Cook the tortellini according to package instructions. Drain and rinse under cold water.
In a large bowl, combine tortellini, salami, mozzarella, cherry tomatoes, olives, red onion, and basil.
In a separate bowl, whisk olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
Pour the dressing over the salad and toss gently to coat.
Refrigerate for at least 30 minutes to allow flavors to develop.
Serve chilled or at room temperature, topped with extra basil if desired.
