Ingredients
2 cups cooked chicken breast, shredded (or use rotisserie chicken)
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
2 cloves garlic, minced
1/4 cup cream cheese, softened
1 tablespoon olive oil
4 large low-carb tortillas or wraps
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
1 handful baby spinach (optional)
Instructions
Preheat a skillet or grill pan over medium heat and add olive oil. Warm tortillas in the microwave 10–15 seconds covered with a damp paper towel.
In a mixing bowl, combine shredded chicken, mozzarella, cheddar, cream cheese, garlic, parsley, salt, and pepper. Add spinach if using.
Divide chicken mixture evenly among tortillas, placing about 1/2 cup in the center of each. Roll tightly, tucking in the sides.
Place wraps seam-side down in preheated skillet. Cook 2–3 minutes per side until golden brown and cheese is melted.
Remove from skillet, slice diagonally in half, and serve hot. Garnish with extra parsley if desired.
Notes
Don’t use too much filling or wraps will split open.
Don’t skip toasting the wraps for best results.
Mozzarella is classic but experiment with different cheeses.
Warm wraps before filling to prevent cracking.
