Overnight Baked Banana French Toast Casserole – a sweet, make-ahead breakfast filled with bananas and topped with a buttery streusel.

Ingredients

  • 1 pound sourdough or French bread, cut into chunks
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 6-7 medium bananas, chopped
  • Streusel Topping:
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, cut into pieces

Instructions

  1. Grease a 9×13 inch casserole dish and set aside.
  2. Add bread chunks to a large bowl.
  3. In another bowl, whisk eggs, milk, cream, sugars, vanilla, and cinnamon.
  4. Pour egg mixture over bread, add bananas, and gently stir to combine.
  5. Transfer mixture to casserole dish, spread evenly, cover, and refrigerate overnight.
  6. Preheat oven to 350Β°F (176Β°C). Bake casserole 35–40 minutes until set.
  7. For streusel, combine flour, brown sugar, and cinnamon. Mash in butter until crumbly.
  8. When casserole is nearly done, remove from oven and sprinkle streusel over top.
  9. Bake additional 5 minutes until streusel is lightly browned. Serve warm with syrup.
