Pancake Sausage Casserole combines fluffy pancakes and savory sausage for a cozy, protein-packed breakfast that’s perfect for mornings or brunch.

Ingredients

  • For the Batter:
  • 2 cups pancake mix (buttermilk recommended)
  • 3 large eggs
  • 1 cup milk (whole preferred)
  • For the Sausage Layer:
  • 1 lb breakfast sausage (bulk or links)
  • 2 tbsp butter for greasing the baking dish
  • For Serving:
  • 1/2 cup maple syrup
  • 2 cups fresh fruit

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish with butter.
  2. Cook breakfast sausage in a skillet over medium heat until browned and cooked through (5–7 minutes).
  3. In a mixing bowl, combine pancake mix, milk, and eggs; stir until just combined.
  4. Fold half of the cooked sausage and half of the maple syrup into the pancake batter.
  5. Pour half of the batter into the baking dish, layer remaining sausage, then pour remaining batter on top.
  6. Bake uncovered 30–35 minutes until golden brown on top.
  7. Cool 5–10 minutes before slicing and serving with maple syrup and fresh fruit.

Notes

  • Use buttermilk pancake mix for fluffier texture.
  • Can swap fruit toppings based on preference.
