Cheesy, flavorful Queso Chicken Enchiladas are a Mexican favorite—easy to make and perfect for a weeknight dinner.

Ingredients

  • 2 1/2 cups cooked chicken, shredded
  • 2 tbsp green chilies, chopped
  • 10 oz tomatoes with green chilies
  • 1/2 packet taco seasoning
  • 5 burrito-size flour tortillas
  • 1 cup cheddar cheese, shredded
  • 1 lb Queso blanco Velveeta
  • 1 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix chicken, green chilies, tomatoes with green chilies, and taco seasoning in a bowl.
  3. Spoon mixture into tortillas, roll them up, and place seam-side down in a baking dish.
  4. Pour melted Queso blanco over enchiladas and sprinkle with cheddar cheese.
  5. Bake 20–25 minutes until cheese is melted and bubbly.
  6. Serve hot with sour cream on top.

Notes

  • Use rotisserie chicken for faster prep.
  • Add extra toppings like cilantro or diced jalapeños for spice.
