Sheet Pan Hot Honey Garlic Chicken and Zucchini is an easy, flavorful dish with juicy chicken thighs and tender zucchini coated in a sweet and spicy garlic-honey sauce.

Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 medium zucchinis, sliced into half-moons
  • 1/4 cup hot honey (or regular honey mixed with a pinch of red pepper flakes)
  • 3 tablespoons soy sauce
  • 2 tablespoons garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix hot honey, soy sauce, minced garlic, salt, pepper, paprika, and onion powder.
  3. Place chicken in a bag or bowl, pour half the marinade over chicken, coat thoroughly, and marinate at least 10 minutes.
  4. Slice zucchinis into half-moons, drizzle with olive oil, salt, and pepper, and toss to coat.
  5. On a large baking sheet, place marinated chicken in the center, scatter zucchini around chicken.
  6. Drizzle remaining marinade over chicken and zucchini.
  7. Bake for 25-30 minutes until chicken reaches 165°F (74°C) and zucchini is tender.
  8. Remove from oven, sprinkle with chopped parsley, and serve.
