A bold Cajun classic with shrimp, smoked sausage, and seasoned rice, packed with flavor and perfect for a hearty dinner.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 oz smoked sausage, sliced
  • 2–3 cups cooked rice (preferably day-old)
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 tbsp Cajun or Creole seasoning
  • 1 tsp paprika (optional)
  • 1/2 tsp black pepper
  • Salt, to taste
  • Optional: hot sauce, chopped green onions, fresh parsley for garnish

Instructions

  1. Prep the protein: Pat shrimp dry and slice smoked sausage.
  2. Cook the sausage: Heat skillet over medium heat and cook sausage 3–4 minutes until browned. Remove and set aside.
  3. Sauté veggies: In the same skillet, cook onion, bell pepper, and celery 4–5 minutes until softened. Add garlic and Cajun seasoning; stir 1–2 minutes.
  4. Add rice & sausage: Stir in cooked rice, browned sausage, paprika, black pepper, and salt. Mix until heated through.
  5. Cook shrimp: Add shrimp and cook 4–5 minutes until pink and cooked through.
  6. Serve: Garnish with green onions, parsley, and a splash of hot sauce if desired.

Notes

  • Day-old rice works best for a non-mushy texture.
  • Adjust Cajun seasoning to control spiciness.
  • Can swap sausage for Andouille for authentic Cajun flavor.
