Ingredients
1 lb ground Italian sausage, browned
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 garlic cloves, minced
1 tbsp Italian seasoning
2 tsp beef or chicken bouillon
½ tsp salt
4 cups broth (beef, chicken, or vegetable)
¼ cup cornstarch mixed with ¼ cup water
36 oz evaporated milk or half-and-half
12 oz cheese tortellini (fresh or dried)
5 cups baby spinach
1 cup milk, plus more as needed
Salt and pepper, to taste
Instructions
Add browned sausage, onion, carrots, celery, garlic, Italian seasoning, bouillon, salt, and broth to the slow cooker.
Cook on LOW for 7–8 hours or HIGH for 4 hours.
Skim excess fat from the top if needed.
Whisk in cornstarch slurry and evaporated milk or half-and-half.
Add tortellini, cover, and cook on HIGH for 45 minutes until thickened.
Stir in spinach and cook 5–10 minutes until wilted.
Add 1 cup milk, plus more as needed for desired creaminess.
Season with salt and pepper and serve warm.
Notes
Use fresh tortellini for best texture.
Adjust milk for creaminess preference.
Optional: top with grated Parmesan before serving.
