Sweet, bite-sized Strawberry Crunch Cheesecake Bites with a crunchy crust, creamy cheesecake filling, and fresh strawberry topping. Perfect for parties or a healthy dessert snack!

Ingredients

  • Crust: 1 cup graham cracker crumbs, 2 tbsp melted butter, 1 tbsp sugar
  • Cheesecake Filling: 8 oz cream cheese, softened; ¼ cup Greek yogurt; ¼ cup honey or maple syrup; 1 tsp vanilla extract
  • Topping: ½ cup fresh strawberries, finely chopped; 2–3 tbsp crushed graham crackers or granola; Optional: drizzle of melted dark chocolate

Instructions

  1. Make the Crust: Combine graham cracker crumbs, melted butter, and sugar. Press a spoonful into mini muffin cups or silicone molds to form the base.
  2. Prepare the Cheesecake Filling: Mix softened cream cheese, Greek yogurt, honey or maple syrup, and vanilla until smooth and creamy.
  3. Assemble the Bites: Spoon cheesecake filling over crust in each mini cup and smooth tops.
  4. Add Crunch & Fruit: Sprinkle chopped strawberries and crushed graham crackers or granola. Drizzle melted chocolate if desired.
  5. Chill & Set: Freeze for 1–2 hours until firm.
  6. Serve & Enjoy: Pop out of molds and enjoy as a refreshing mini dessert.
