Ingredients

  • 4 cups frozen tater tots
  • 1 pound beef sausage
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 large eggs (fried or scrambled)
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven according to package instructions and bake tater tots until crispy and golden brown. Broil 2-3 minutes for extra crunch if desired.
  2. In a skillet, cook beef sausage over medium heat until browned, about 5–7 minutes.
  3. Reduce heat to low, stir in butter, then sprinkle flour and cook 1–2 minutes.
  4. Slowly pour in milk, stirring constantly until gravy thickens, about 3–5 minutes. Season with salt, pepper, and garlic powder. Remove from heat.
  5. Cook eggs to preference (fried or scrambled).
  6. Assemble bowls: layer tater tots, spoon gravy over the top, add eggs, then sprinkle cheese, green onions, and optional red pepper flakes.
  7. Serve hot and enjoy!

Notes

  • Leftover gravy can be stored in the refrigerator for 3–4 days and reheated with a little milk.
