Ingredients
1 pound breakfast sausage
1 package frozen hash browns (about 30 oz)
8 large eggs
1 cup milk
1 cup sour cream
2 cups shredded cheddar cheese
½ teaspoon salt
¼ teaspoon black pepper
¼ cup chopped green onions
Instructions
Cook sausage in a skillet over medium heat until browned; set aside to cool.
In a large bowl, whisk together eggs, milk, sour cream, salt, and pepper until smooth.
Grease a 9×13 baking dish. Layer half of the hash browns, half the sausage, and a layer of cheese.
Repeat with remaining hash browns, sausage, and cheese.
Pour egg mixture evenly over layers, cover with foil, and refrigerate overnight.
Preheat oven to 350°F. Bake covered for 45 minutes, then uncover and bake 20–25 minutes until golden and set.
Top with chopped green onions and serve warm.
