Yaki Udon Noodle Recipe – Easy Japanese Stir-Fried Udon

A quick and delicious Yaki Udon stir-fry with tender chicken, vegetables, and thick udon noodles tossed in a savory sauce.

Ingredients

  • 8 oz udon noodles
  • 1 tbsp sesame oil (divided)
  • 1 cup boneless chicken breast (sliced)
  • 1 cup bell peppers (sliced)
  • 1 cup carrots (julienne)
  • 2 green onions (chopped)
  • 3 tbsp low-sodium soy sauce
  • 1/2 cup vegetable broth
  • 2 garlic cloves (minced)

Instructions

  1. Cook udon noodles according to package instructions. Drain and set aside.
  2. Heat 1/2 tbsp sesame oil in a skillet over medium-high heat. Add chicken and cook 5–7 minutes until browned and cooked through. Remove from pan.
  3. In the same skillet, add remaining sesame oil. Add bell peppers and carrots; stir-fry 3–4 minutes until tender-crisp.
  4. Return chicken to skillet. Add noodles, soy sauce, and vegetable broth. Stir well until heated through.
  5. Add minced garlic in the last minute of cooking.
  6. Remove from heat, garnish with green onions, and serve.

Notes

  • Add shrimp or beef for variation.
  • Use fresh udon noodles for best texture.
  • Adjust soy sauce to control saltiness.
